Gina started The Vintage Cake with Nancy after spending 2014 as the Executive Pastry Chef at Antoinette Boulangerie in Red Bank. Under her guidance and leadership, the boulangerie received numerous press and accolades. Before returning home to Red Bank, she spent five years as the Executive Pastry Chef at The Palace at Somerset Park creating countless wedding cakes, along with shaping the dessert menu for weddings & corporate events. Prior to that, she served as a Pastry Cook at the Hilton Short Hills.

Her interest in pastries began as a youth, while admiring her father’s work at the pastry stand at the annual Italian American Festival of Ocean Township. Her creativity and precision stems from her mother’s passion for artistry.

She is a 2008 Baking and Pastry Arts graduate of the Culinary Institute of America. In addition, she has a bachelor’s degree in Nutritional Science from Rutgers University, where she also was an All-American & captain of the gymnastics team. Gina is an alumnus of Red Bank Catholic and a current Red Bank resident.

Ms. Nancy Lee graduated from Rutgers University and earned her psychology degree with honors. Shortly after graduation she decided to pursue her love of baking by attending The Institute of Culinary Education in New York City where she graduated with a certificate in Baking & Pastry Arts.

In 2009, she performed her externship at The Palace in Somerset Park where she continued to gain experience and learn under the guidance of Gina Roselle. There she honed her skills in wedding cake decorating and high-quality dessert production.

From 2010 - present day she also provided freelance wholesale desserts and cakes for the authentic French restaurant Sophie’s Bistro in New Brunswick, NJ. In 2013, she was promoted to position of Executive Pastry Chef when Gina left and continued to manage the bakeshop of several employees.
